Movie and Tv show stand-ins?

I was watching backstage footage of Pretty Little Liars and I Lucy
Hale introduced their "stand ins" she's like "this is mine, Ashley's,
Troian's, and Shay's" what are stand ins and why do they need them in
movies and in tv shows?
